Greek Salad Cups

Ingredients (single serve)

  • ½ tomato
  • ¼ small cucumber
  • ¼ small capsicum
  • ¼ small red onion
  • 3 Greek olives (pitted)
  • Small piece Greek feta cheese
  • Pinch salt
  • Pinch oregano
  • 1 tbsp olive oil
  • ½ tbsp. white vinegar

Method

  1. Cut the tomato, cucumber and capsicum into chunky pieces. Place in a medium bowl.
  2. Slice the red onion and add to the bowl.
  3. Cut the olives in half. Add to bowl.
  4. Cut feta into small pieces and add to bowl.
  5. Add a pinch of salt and oregano to the bowl and mix all ingredients well.
  6. In a small bowl, whisk the olive oil and white vinegar.
  7. Add the dressing to the bowl and toss to coat the salad.
  8. Place salad in a cup.
  9. Enjoy!
