Ingredients (single serve)

  • 15 corn chips
  • 2 tbsp black beans
  • ½ tomato
  • ¼ small cucumber
  • 3 cm piece shallot
  • 3 coriander leaves
  • Pinch salt
  • ¼ lime
  • 2 tbsp sour cream
  • ¼ tsp taco seasoning
  • 2 tbsp tasty cheese


  1. Place approx. 15 corn chips on the bottom of paper container.
  2. In a small bowl, mash 2 tablespoons of black beans with 1 tablespoon of sour cream until well combined. Place the black bean mixture on top of the corn chips.
  3. Cut the tomato and cucumber into small diced pieces. Place it in a small bowl.
  4. Cut the shallot and coriander into small pieces. Add to the bowl with the tomato and cucumber.
  5. Add a squeeze of lime and a pinch of salt. Mix until well combined.
  6. Place salsa on top of the black bean mixture.
  7. Mix 1 tablespoon of sour cream with ¼ tsp of taco seasoning. Place sour cream mixture on top of the tomato salsa.
  8. Sprinkle 2 tablespoons of cheese on top of the sour cream.
  9. Enjoy!
